Fairmont Grand Del Mar has unveiled its newly redesigned lobby lounge, library and bar. The resort’s renovation project continues in partnership with Los Angeles-based design firm Bishop Pass.
The refreshed spaces now have a color palette rooted in gold with accents of green and deep burgundy in addition to newly installed Venetian glass chandeliers in the main lobby. Guests can enjoy light bites, specialty cocktails, high tea service and live entertainment in the lobby lounge. Lobby bar enhancements include the addition of a custom mural inspired by the Los Peñasquitos Canyon Preserve, a banquette table and series of flexible dining tables. The refreshed bar menu includes tapas-style dishes, craft cocktails, spirits and wines.
In partnership with Warwick Bookstore, the library houses a selection of books for guests to explore during their stay. Other enhancements include the addition of a large screen television and a private liquor program featuring top-rated whiskies, bourbons and cognacs.
The newly refreshed Amaya at Fairmont Grand Del Mar will offer guests a French brasserie-inspired dining experience. At the helm of Amaya’s new culinary operations are Executive Chef Bryn McArthur and Chef Roman Garcia. Guests can dine in Amaya’s shaded terrace or the dining room indoors. The menu features a twist on classic French cuisine, using Southern California’s freshest ingredients from local farms and waters.
